Has been running the restaurant since 1993 after studying and working as a violin maker for nearly 15 years. What do both professions have in common? Maybe the search for perfection and the best result. He is passionate about everything edible. HIs culinary memories go back to the summers he spent at Coltibuono when he was a boy, when bread and focaccia were cooked in the wood oven and the excellent food eaten there was from the working farm.
