About Us

We are one of the historical restaurants of the area, started in 1968 and run by a family of restaurateurs until 1993. Since then it has been in the hands of the estate. We work insencently to find local produce that we can trace to the source and where possible, organic. Everything is home made and our passion is the flavour and taste of our dishes. We love the recipes that evoke memories and past traditions from all over Italy because we believe that food should not travel too far but that culinary tradition absolutley should!

The Restaurant

Situated in the original but refurbished stables, and with elegant contemporary flair, the restaurant’s atmosphere is warm and welcoming, while the surrounding garden enhances the overall mood with a touch of romance.
During the hotter months meals are served outdoors under a bower of climbing roses and wisteria. Here the gourmet can savour the true aroma and flavour of the Chianti region.

The Kitchen

Fried cod marinated with a drop of vinegar, onion, raisins and pine kernels, the excellent cold cuts of the Chini butcher in Gaiole, our terrine made from deer caught in Chianti. Fresh, homemade pasta with organic flour from “Pereto” of Rapolano estate, with a spiced pork sauce. The infuriating wild boar that feed off our vines are cooked in “dolceforte” from a recipe of the farm manager’s wife that worked at Coltibuono in the 1970s and then our tender and tasty roast pork with an apple and mustard puree. Why not try the parfait made with chestnuts from the Pratomagno hills and chestnut honey from the Ginestra cooperative and the unforgettable chocolate cake with wild fruit jam from the Abetone mountains……..and much more!

Has been running the restaurant since 1993 after studying and working as a violin maker for nearly 15 years. What do both professions have in common? Maybe the search for perfection and the best result. He is passionate about everything edible. HIs culinary memories go back to the summers he spent at Coltibuono when he was a boy, when bread and focaccia were cooked in the wood oven and the excellent food eaten there was from the working farm.

He has been with us for 4 years but was born, raised and lives locally. In his long, professional career that began in the 1990’s, he has mostly worked in the area. He has a lot of experience and can make almost anything – whatever is suggested to him, he will find a way to cook it. His preferred cuisine is Tuscan and his passion is confectionery. A man of few words but many achievements.

Is the most well known and appreciated man in the restaurant. When he started working with us he was little more than a boy. He was enthusiastic and he had already decided that he wanted to be the headwaiter of the restaurant. He is famous for his fashionable haircuts, his impeccable manners and his ability to make people feel at home. Our clients adore him….especially the women….. but he now has a family!

the chef-s right hand man
His forte is pasta for which he has a  passionate. He is an instinctive cook always on the lookout for rich flavours and succulent dishes. He loves to enhance sauces with herbs that he picks in our vegetable garden and with spices too. He is not Milanese but his risottos are excellent. He is also a good percussionist and we constantly have to ask him to turn the music off in the kitchen during serving time because he would have it playing all day long in background.

He helps in many ways by cleaning the kitchen, washing dishes, pans and cutlery, washing the floors, cleaning the gutters, sweeping the autumn leaves, varnishing the wooden tables and loads more things that would take too long to list. Working with us he has become a renowned expert in dividing and recycling rubbish. In other words he is an absolutely vital part of the team.

the right-hand girl of Riccardo….or maybe the left!
She too is an historical part of the restaurant. She has grown up with us. She arrived as a young girl just out of university with a degree in Maths which did not open many doors to her. She is now married with a beautiful daughter. She actually would have liked to be in the kitchen because she loves food, loves cooking and appreciates good wine. You can ask her what her favourite wine is: if she suggests one, it will be an excellent one!

She has been with us just a few years and originally came as a substitute for another rumenian girl. When you hear her speak, more than a rumenian accent, she has a strong tuscan accent…even a Valdarno accent….actually from San Giovanni! She is very good and willing. If you are eating and don’t think she is thinking about you, she will know at exactly what point you are and what you need and she will be with you in a flash.
